Do you want a guaranteed job? Get a degree in chemical engineering, you will not be unemployed for long. Many are hired even before they graduate with salaries not below € 1,400 euros for 14 months. One specialization is particularly sought-after: food chemical engineering. Italian graduates are considered among the best in the world. The 4 most important Italian faculties (Milan, Turin, Naples and Salerno) graduate between 600 and 700 chemical engineers every year, a good percentage of whom go on to specialize in the food industry. In 40 years, the four Italian universities churned out between 25,000 and 30,000 of them. “Every year our university - says Sauro Pierucci, chemical engineering professor at the Giulio Natta department, Politecnico di Milano – produces an average of 130 chemical engineers for every degree course, 100 of whom are hired by companies based in the province of Milan”.
But what does a chemical engineer applied to food do? They are a crucial link in an industry of strategic importance for Italy’s economy, with high export rates and extremely high technology content. For example, they deal with optimizing food production processes: the machines, systems, industrial lines capable of extending products’ life span in the refrigerator, like fresh milk that lasts longer even once opened. Or vacuum-packaged muscles we can safely eat even after 10 days. “Food contributes a great deal to our happiness – reminds Pierucci – but nothing would exist without machines or chemistry: our metabolism is chemistry, the simplest candy made by melting sugar in a pot is chemistry. More importantly, chemistry lies at the basis of such natural foods as fruit and vegetables: if we have them, either fresh or processed, we hardly think that behind them is the work of food chemical engineers and food technologists”.
With the help of the EXPO 2015 and the keen interest surrounding the world of food today, this fascinating but little-known profession will hold its global summit at Fiera Milano during the professional processing and packaging exhibition IPACK-IMA (May 19-23). This is not by chance since IPACK-IMA is the global leading show for food processing and packaging technology and the undisputed standard-setting exhibition for dry pasta. IPACK-IMA will provide the stage for two global congresses: ICheap12, 12th International Conference on Chemical and Processing Engineering organized by AIDIC – the Italian Association of Chemical Engineering; and Frutic 2015, 9th edition of the international symposium of engineers and technologists (the specialists in food production engineering and control) dealing with fruit, vegetable and cereal products.
From May 19th to 22nd ICheap12 will attract 500 between engineers, food technologists and agricultural experts who will review 428 scientific works by 1,350 authors from over 50 countries and all continents. Key topics under discussion are of great current interest: environment, energy, quality control, biotechnologies, biomass management, plus two thematic areas closely connected to the EXPO: food waste prevention and the definition of new food safety goals. “65% of participants come from outside of Italy – assures professor Pierucci – speakers are 65% academics and 35% industrialists.”
Cornelia Rauh, head of the Institute of Food Biotechnologies and Food Process Engineering of the University of Berlin is expected from Germany; she will coordinate the session dealing with process and product engineering strategies. Laura Piazza from the Department of Nutrition, Environment and Food Sciences of the Politecnico di Milano will be addressing an even more fascinating topic: engineering and industrializing food structures based on health, well-being and pleasure.
70 works by over 250 authors will be presented during Frutic. Like ICheap12, Frutic will also welcome 500 congress participants – the two events will be held jointly. The discussion will deal with very specific issues, which however also deeply affect consumers: microwaves in place of the pesticide treatments necessary to preserve cereals and legumes in siloes; or advanced vision systems capable of determining whether a tomato or an apple is high-quality ‘from the inside’, i.e. without cutting them.
